Express Tiramisu


Authentic Tiramisu is awesome. Fresh mascarpone on tasty coffee soaked cake! If that is what you are looking for, this is not it! Personally, I love tiramisu, but it is just too tedious to make. This is why I've created an alternative that is much faster to make while still containing the same flavors. Additionally, most of the ingedients are easy to come by.

This cake is made in multiple parts. First the sponge cake is made and drenched with coffee. Then, a cream cheese filling is applied to the middle and top. Lastly, the cake is dusted with cocoa powder for a delicous presentation. If you decide to make this cake, remember to whip the cream mixutre as much possible to generate a light and airy filling.

Recipe

  1. Preheat oven to 350˚F. Line bottoms of two 6" cake pans with parchement paper
  2. Add egg whites to standup mizer and beat on high speed for one minute. With mixer on, gradually add white sugar and continue beating for 8 minutes until thick and fluffy
  3. Turn off the mixer and fold in the yolks, flour, and baking powder. Careul not to deflate the batter or over-mix
  4. Divide the batter into the two cake pans and bake for 20-25 minutes
  5. While the cake is baking, it is time to make the filling. Add cream cheese, heavy whipping cream, and vanilla to a stand up mixer. Whisk on high for 1 minute. Gradually add powdered sugar and continue whisking for 5-7 minutes or until the mixture has doubled in volume
  6. Starting boiling water to prepare the coffee. Generally, 3 spoons of instant coffee for 2 cups of water should suffice
  7. After baking, remove the cake from the trays and let cool for a couple minutes. Then, generously soak one of the cakes with half of the brewed coffee
  8. Apply a thick coating of the whipped filling mixture from earlier to the top of the soaked cake. Carefully stack the remaining dry cake onto the soaked cake. Apply the coffee and filling as before to the top layer
  9. Using a sifter, dust the top cake layer with cocoa powder and serve cold
